Because the virus wasn't here around for the full year in 2020, and certainly not as well spread.
Stricter restrictions in 2020.
Vaccine roll out takes time so well in to 2021 before the majority vaccinated.
Not really much of a riddle.

Actually the english language does not have an official regulating body, it seems the Oxford Dictionary is the unofficial go to, according to wiki.
Maybe not by you or me but definitions can be changed, not that it happens often but it happens.

They didn't redefine vaccine.
Whether the mrna vaccines were needed or not, or whether they work well or not, has nothing to do with the mechanism they use.

Immunity and protection are synonyms, the old definition and the new would have fit the mrna vaccines either way. What part of that are you having trouble with?
