Immunity and protection are synonyms, the old definition and the new would have fit the mrna vaccines either way. What part of that are you having trouble with?

ETA: Honestly, I think they changed it because people had the notion that immunity was some type of magical shield, like what you seem to be saying, when it really is just protection offered by an immune system that has been previously exposed to a pathogen.
