The representative from the bank testified that they didn't have the tools to valuate the kinds of properties Trump was trying to claim as collateral so they largely relied on the numbers being provided by Trump.
The prosecution in this case isn't out to prove that Trump Org was successfully committing fraud. Only that they had a persistent history of tying to defraud banks and investors.

The fact that the banks are saying they knew Trump's numbers were bad kind of proves the prosecution's case.
