Will you still be able to use thier services if you do this to them? What about the Visa account, can she still use the card?

I am sure you can, but there has been a couple cases where the bank as taken money form your savings if you stop paying your CC off.
I would recommend moving your money to another bank before starting the process.

On a letter the bank usually only shows the last 4 - 6 numbers of your CC.
