'Geology' is a catch all term for a number of sub-disciplines. while geologists don't profess to know everything about the Earth, they are working hard to try to build an understanding. Sometimes they don't get it right, but most of the time they are near to pretty much bang on, or have the 'best fit' for the current knowledge. It's Science. It's not set in stone as absolutes, but this is where the Scientific Method comes into play.
Engineering Geology, for example, is a load more practical than quantum theory.
