This thread took a strange turn. I love oysters too. My fantasy is having a time machine to go back to the waters and beaches of old to experience the abundance of the waters.

It's hard to image but in Philadelphia, oysters were so abundant around the turn of the 20th c they were sold on every street corner. Now it's pizza.

Although I LOVE them raw, I don't think it's a good idea to eat them raw around here anymore. Now I love them pan fried. There are a lot of different recipes but I let them sit in some hot sauce and lemon juice, dredge them lightly in corn meal and flour and pan fry for 2 to 3 min. per side in ghee and olive oil. Sooo good!!

I have never seen sea urchins on any menu, even in Fremantle here, where you get all the seafoods.. Might have to have a walk around there and look into that. That place has the best food. When we won the America's cup, it was a thrilling place to be in. Now, mostly homeless folk, but the food, while pricey compared to the 80's, is still top notch.


Have no doubt you have access to better seafood than I do. Im sure you have even better quality

However, Ive only seen it served in sushi restaurants in my limited experience, it's weird though not a huge fan of sushi, but urchin just has that fresh ocean taste, like good fresh oysters do. Of course, I can stuff myself on oysters it's hard to do that on sea urchin portions.

But it is not only the US and South Africa that have national fishes.

Japan also has a national fish.

And don't think cheap wine can't be "sparkling wine".

I recall bringing a bottle of cheap wine, and then her husband took me to the kitchen, and they had this soda-stream machine from the 1980's, and my sauvignon blanc went in there, and they had "champagne" for the entire party.
