Blaming western diet? I'll see you and raise, eastern diet (in fact i would not call it a 'diet').

A garbage meal. Pagpag is a term given to left-over food, meat picked from garbage and dumps, which is then washed, cooked and sold to poor communities in Manila, Philippines.



Mcdonalds, KFC, fast foods basically. Its disgusting, and NO human or animal should have to live like that.

Now then, where were we, ah yes western diet......

I have made some amazing homemade fries. I just don't enjoy frying things so I don't do it very often.
I do agree with Augustus that you must fry twice or three times.

Define 'now'. With human history spanning thousands of years a hundred years could be 'now'. Now doesn't mean in the past few months, now in this case is a decade, long before the vaccine.

We make home fries to go with our fish on fridays. scrub a potato with a brush then cut it into french fries. Then deepfry them in corn oil in the deep fryer and add sea salt when done. The problem these days is that people try to make things taste like the crappy stuff in Restaurants. I do not want my fries to taste as bad as McDs or BK fries. We also make Parmesan fries in the oven occasionally, those are really good too. They take quite a bit of time to prepare and bake though, but are worth it....they are good leftover cold too so we always make extra since they never go to waste.


Pommels Frites are just a different name for French fries. Still sliced potatoes.

The reason your French fries (Pommels Frites) come out soggy is your not using temperature control. Put raw cut potatoes in 350 F degree oil and they will burn on the outside and be soggy on the inside every time. There are two methods to cook fries so they come out as crisp fries. The first is a double cook method: cook the fries in 250 degree oil till they just start to stiffen up or even start to brown a tiny bit. Then turn the heat up to 350 degrees to do the second fry and finish them. In the case of a fish fry, do the low temp fry, remove the fries, and fry your fish. Put the fried fish in a 170-200 degree oven to keep warm and then do the second high temp fry. That way everything is basically done at the same time and your fries are crispy n the fish still hot.

My preferred method is never let the oil get hotter than 250 degrees. Takes about 45 minutes or so but the fries are as good as any I have had. This is the method used to make potato chips.

Very big on eating real food and portion control. Just learn to eat till satisfied and not stuffed. At the tender age of 73 I am exactly the same size as when I was in college and wear the same sized cloths. Granted, I hit the gym 5-6 days a week but diet and self control are the secret. Fwiw… weigh 195 n wear 32 inch waisted pants.

I’m the guy who is a chief n writing a cook book, but I follow my own advice and it seems to work. I eat anything that sounds good to me. Just real food n don’t pig out. Works for me and do try temp control next time you do fries.

Well, it's quite true our food, and eating habits are trash..generally speaking. I have 0 doubt it affects all our systems.

I've have been wanting to dig out my fryer..I'm almost inspired now. Home made KFC and double..or even triple fried fries! What kind of oil?

Have lots of prawns in the freezer too

Could it be that we are much to sanitized now ? Kid's don't go out side - You shouldn't wash your chicken before cooking -clean every service all the time every time -

I was raised in a small Tennessee town now electric or plumbing had to go out to the out house to take a crap in the snow carry water in from the well it would sit on the counter with a dipper in it -

i ate dirt torched dirty crap and never washed my hands . the younger generations are to sanitized .

I believe you are right. With everything sterile, we get little in the way of daily inoculations.

Alot of the foods are coming from. Bill Gates farms.Potatoes,carrots and onions to name a few for those that are blaming it on junk food or vaccines there is a connection for you to research.

Could be diet such as MacD and other crappy foods getting into these other countries. I have read where places like Japan are having issues with obesity which they never had before.

Believe it or not but the oil used is not a critical issue. As long as you keep it below what is known as the “smoke point.”

My personal preference is peanut oil but that can be a bit pricy so most of the time I Canola oil bought at either a restaurant supply or Costco. It is the method that makes ya or breaks ya.

So ya got some shrimp in the freezer! How about a healthy idea? Boil them shell on for exactly two minutes. Exactly two minutes! Dump them in a strainer and do not rinse. Let them sit till they are just warm, then chill them. They will come out tender, crunchy, and juicy every time. Make your own cocktail sauce. Ketchup, lemon juice, horse radish, n Worcestershire to taste. Hint: every 10 year old in Louisiana knows how to make their own cocktail sauce.

Give it a try.

That is not true. Basically spent two years traveling the pacific rim and formally trained in Tokyo and Shanghai. Am ashamed at the fat people every time at the US airports when I get back. One of the keys to the Asian diet is again, real food, plus a diet of about 20% protein. Even sushi has more carbs than you think.
