What do you guys eat for lunch?

I've never been much of a lunch eater. I never liked eating at school, and it went from there. I've been trying to eat something at lunch time lately so I can eat supper (dinner) a bit later and not be hangry.

Here's my lunch today. Rice, an egg, some avocado, green onions, and chili oil. It was too much though. And I hate cooking just for me.



So what's lunch for you? And what are some no cook lunches you like that aren't prep heavy?

I will definitely try to eat lunch for approximately one week before I just go back to eating an apple at like 10am, and drinking too much coffee.

Today's the first week I haven't been on the road in awhile so I'm having some leftovers. Yesterday was a half a pork chop with vinegar peppers and ions. Today is a steak sandwich. Tomorrow may be some butternut squash soup. Not sure for Thursday. Friday is a slice of pizza.

When I'm on the road I make sure I'm not eating at chain places and that the food isn't processed crap.

Ooh. I need to make some vinegar peppers. Leftovers seem like the way to go for lunch. Usually my partner takes them for his lunch, but maybe I'll make soup once a week and divy it out.

A can of chicken breast (drained), smothered with half a jar of chicken gravy and hot sauce. Microwave for 2 minutes and thirty seconds.
5 star Michelin crap right there.

I also have a couple of containers of cassoulet in the freezer from a couple weeks ago which would be good for at least 4-5 lunches. A container of Bolognese, two pesto, a lamb ragu and a large pasta e fagioli. I tend to make more than I need for whoever is dining so I can have the food I like at some future point, typically for lunch.

I'm a freezer hoarder too. I'm just too (not lazy.. unmotivated?) to thaw anything for lunch. Pesto would be so easy though. We only got four jars out of the basil this year, so I'm being stingy. There's nowhere to buy anything decent once it's gone.

It doesn't count for me, personally, because oatmeal raisin cookies are ... against my religion. My religion being that cooked raisins are satanic.

Some days I eat out. Yesterday I had sushi. There's a little hole-in-the-wall joint not far from work that has 2 rolls, soup, rangoon for $10. Today I will hit Black Dog coffee. They're hooked to bakery and do local sourcing. Triple grilled cheese from local creameries, chipotle mayo on bakery bread (oh ... they know bread) and a Shatto mocha which basically a latte made with whole milk chocolate milk from a local dairy (sinfully delish).

Then for the rest of the week I will have adult lunchables: crackers, cheese, meat with a side of raw veggies and fruit. I will eat in my car.
