I know all about how to correctly interact with customers and what to say and not to say. The point is that this guy should have known better. You admit as such, but he said it anyways. So CLEARLY he wasn't smart enough to keep his mouth shut in that regard, so why are we giving him the benefit of the doubt that he wasn't being serious with his remarks?

Maybe HATED the boss and owner so they staged what is akin to performance art..
Still more likely than a server thinking they had the authority to check papers and refuse service..

Keep in mind, joke or otherwise, what he said was VASTLY inappropriate, and even if it was truly a joke if it had been overheard by his manager he would have likely been fired on the spot without the costumer complaining.

I promise refusing service or to take a table is instant termination everywhere. It is a staple of the industry.
