Basically, they don't want the VIP's email address exposed to anyone, and want to be able to either strip out or replace the email address in the to/from fields in all of the emails we want to send out.

That doesn't even make sense, does it? You would have to be stupid or named James Comey to believe that!
Why would an IT guy act on his own and go to so much trouble to do something like that if his higher ups told him to preserve it? What was in it for him to go against his bosses? No, he was told to get rid of it, delayed or neglected to do so, then realized the ramifications for not doing it, got on Redditt to ask for technical help, and the cat crawled out of the bag.

When Paul Combetta aka “stonetear” woke up yesterday morning, it’s doubtful he would have suspected a two year old archive written under his Reddit pseudonym would have been on his mind.
However, someone must have alerted him asap because within hours of our story hitting the web (04:45am EDT) Combetta began furiously deleting his Reddit postings, user information, and various media forum histories.
In addition to secondarily confirming his real-life identity, in legal-speak such behavior is called: “consciousness of guilt“.

He needs to call a press conference and sing, like, NOW...before he is 'shut up.' If he values his safety, he needs to shout the truth from the rooftops today and ignore all advice from his attorney to say nothing.
And then he needs to find a new attorney that will advise him according to his best interests...not Hillary's.
