She certainly CAN sue over religious discrimination. All she needs is a lawyer who is willing to take her case. Now if she is going to be successful or not, that is a completely different question.

It's up to a judge or not whether the case should be worth considering or not. Likely, she will just run into roadblocks where judges won't accept the case on the grounds that it would waste the courts' time. But even if she did find a judge willing to hear the case, she likely won't win it.
