They thought they were tracking MH370 itself, they said unidentified object because radar cannot identify objects =) .. they can see that there is something flying in an area at a particular altitude, heading and speed but they can't get detail like what type of craft it is ( 777 or something else ), flight numbers.. etc.. so it could have been MH370 or another aircraft.
This is why a transponder is important.. they report all of the same information but it also includes specifics such as the plane's identification, location, altitude, heading, speed and some general information about the health of the craft.. the problem is the transponders were off so the plane ( assuming it was MH370 ) would appear as just a blip on the radar screen .. or a "UFO" since it can't be unidentified using radar alone.

Need a source for that Malaysian air force chief's quote that isn't a UFO blog.
A Malaysian military aircraft did track an unidentified flying object (UFO) in the country’s airspace at the time of MH370 losing contact with the ground control, the Malaysian Prime Minister has finally admitted – six weeks after the passenger jet disappeared.

Why would the chinese shoot the plane down?
Earlier on Wednesday, Rodzali Daud, the Malaysian air force chief, told a news conference that an aircraft was plotted on military radar at 2:15 a.m., 200 miles northwest of Penang Island off Malaysia's west coast.
But there has been no confirmation that the unidentified plane was Flight MH370, Rodzali said, and Malaysia was sharing the data with international civilian and military authorities, including those from the United States.
