I use to love Oreo's, they were my indulgence but I stopped eating them over a year ago because of all the crap in them. I don't eat anything with HFCS so I said good bye to my once favorite night time snack with a glass of milk.

This past Christmas I sent out gift baskets and boxes of homemade goodies including Oreo's. I was craving Oreo's and came across a recipe for them online while looking for cookie ideas. I made them in a small batch first to try them out and they were delicious so naturally I made more!

I made about 8 different cookies this holiday season, 3 kinds of breads, 2 chocolate/cookie barks, homemade Snickers and one tray of granola bars. I made little baskets and handed them out as gifts. I gave one to everyone who works at my apt complex in the office and maintenance. Everyone said they loved the Oreo's the most! I had to keep my husband away from them. He kept trying to steal them when I wasn't looking.

I got the recipe from The Smitten Kitchen Homemade Oreos. I also like that site for recipes as well. I'm glad I came across it.




Makes 25 to 30 sandwich cookies

For the chocolate wafers:
1 1/4 cups (155 grams) all-purpose flour
1/2 cup (45 grams, but cocoa weights can vary greatly) unsweetened Dutch process cocoa
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 to 1 1/2 cups (200 to 300 grams) sugar [see recipe note]
1/2 cup plus 2 tablespoons (1 1/4 sticks or 140 grams) room-temperature, unsalted butter
1 large egg

For the filling:
1/4 cup (1/2 stick or 55 grams) room-temperature, unsalted butter
1/4 cup (50 grams) vegetable shortening
2 cups (240 grams) sifted confectioners’ sugar
2 teaspoons (10 ml) vanilla extract

Set two racks in the middle of the oven. Preheat to 375°F.
In a food processor, or bowl of an electric mixer, thoroughly mix the flour, cocoa, baking soda and powder, salt, and sugar. While pulsing, or on low speed, add the butter, and then the egg. Continue processing or mixing until dough comes together in a mass.
Take rounded teaspoons of batter and place on a parchment paper-lined baking sheet approximately two inches apart. With moistened hands, slightly flatten the dough. Bake for 9 minutes, rotating once for even baking. Set baking sheets on a rack to cool.
To make the cream, place butter and shortening in a mixing bowl, and at low speed, gradually beat in the sugar and vanilla. Turn the mixer on high and beat for 2 to 3 minutes until filling is light and fluffy.
To assemble the cookies, in a pastry bag with a 1/2 inch, round tip, pipe teaspoon-size blobs of cream into the center of one cookie. Place another cookie, equal in size to the first, on top of the cream. Lightly press, to work the filling evenly to the outsides of the cookie. Continue this process until all the cookies have been sandwiched with cream. Dunk generously in a large glass of milk.






They were very easy to make. The only part that took any time was putting them together but it was so worth it in the end.

You should definitely try them! I made a third batch as "double stuffed" Oreos. You could even make the chocolate or mint filled ones. I think i'm going to make pink cream filled ones for Valentines Day and send them to my husband overseas.



Do you have any tips on keeping husbands away from them?



LOL I told mine I'd cut his fingers off.

If you feel like oreos and don't want or have time to bake, newmans (Paul Newman the actor) makes a cookie just like the oreos and no hfcs,I know because my daughter was allergic to corn, I used to have to make everything from scratch and I did make oreos...his company made products that gave me break.

I even made marshmellows (no corn syrup) (what a messy job) it was such a treat for her to have and not get sick.

I see your pic! they look just like the ones I used to make, and they DO taste just like oreos

I love The Smitten Kitchen! I've found quite a few nice recipes on there. I'll have to order a cookbook, didn't know there was one. I mostly go there and look directly under recipes lol I think her Snickers bars were the ones I made. Not 100% sure on that. It definitely is a good site.

I come across A LOT of cool cooking blogs via FB and my own recipe searches, this is probably one of my new favorites. I have used Allrecipes for about 8 years now, that is another good one. There are some options on there that are for "paid" members, which kind of sucks because it use to be free 100%. I had a "paid" membership for a while but didn't think it was worth paying for so I just went back to the regular "Free" membership.

I also like Super Cook You can input ingredients that you have and it populates recipes on the right that you can make with what you have. Now I have had it suggest recipes where I didn't have some of the stuff it asked for so I just kept looking.

One of my new favorite Italian sites is Cooking With Nonna, it's an Italian blog site/show with this one women and her two Nonna's. I bought her knives recently, $12 with shipping for 6 steak knives. They are basic serrated knives and I love them. They are better than the fancy expensive steak knives we bought for $100 bucks! They are Made in Italy and shipping depends on where you are. I find lots of good Italian recipes on there as well.

Glad you enjoyed The Smitten Kitchen! I know I spent a lot of time on there too. I also did Parmesan Basil Wheat Thins from her site. Her recipe was for regular wheat thins but I added the parmesan/basil. I love Wheat Thins but they started to bother me with all the crap in them. Making them from scratch was simple and no added ingredients that don't belong! You can do any of the flavors they sell too. In my thread I link to her page for the Wheat Thins recipe, she has different prep instructions depending on what you use to blend the ingredients.

Thanks for all the links! Will be checking them out as well. Will be trying the parmesan wheat thins too. Sick and tired of over priced crackers at the stores with all the crap in them too.

Ty Sooo much. I can make an old favourite from scratch now: cookie cake. Layer with homemade whipped cream and let sit, covered over night for cookies to moisten.

Well I made a batch of oreos tonight. I think I can do better. Mine came out pretty crisp and the filling was pretty soft so I put them in the fridge hoping that will firm up the filling. I used strawberry flavoring for Valentine's Day. Will try them again!

Did you let the cookie part cool down before you put the cream filling on? If the cookie part was still warm that would soften the filling. Mine came out pretty much like an Oreo minus the harmful HFCS. I also whipped the cream filling for a bit. Did you use a hand mixer or stand mixer? I made my first batch with a hand mixer and it wasn't as good as the stand mixer. It whipped them to a better consistency.

I like the strawberry flavoring! Good idea. I was going to make some for Valentines Day and color the cream filling red but I didn't get around to it. So I'll do it for St. Patty's Day and make the cream filling green!

I think I had the rack too low in the oven for one, and added too much liquid to the filling. I used 1 1/4 C sugar and next time will use 1 1/2 C too. I used my stand mixer to whip the filling and let it go for a good while and the cookies were cooled when I filled them. The strawberry flavoring tints the filling a light pink and is a very mild flavoring so I would add another teaspoon for a stronger flavor and add coloring for a brighter pink. I was never an Oreo nut anyway so that could be my real issue! lol. Will try them again for St Pat's Day with green coloring though. It's a fun and unique holiday treat that's worth keeping at it to get it right.
