Ahh ... never a truer word spoken.


Half round knife was prolly the most lethal - stropped thing - that I own.

The old school Saddler that taught me - may slice Himself on occasion - always deep - needing stitches ....
Always self administered.

Ran an awl through my hand once - kept working.

( the half round knife ; you could hold it to the bench, and simply drag 3-5ml belly hide into whatever you want ! or skive!)

As in " knife through butter " !

As I said ... just one of many trades - call me Jack.

Sharp is better. Love doing a Vietnamese Beef salad.

Thinly sliced eye fillet, covered in boiling water for 5 mins. Drained, and added to -
fish sauce , fresh chili ( go hard or go home )

And your choice of garden greens, tomatoes , mint , coriander.

All tossed with a drizzle or extra virgin olive oil ...

Ed: Add brown sugar to taste.
Also advise using Himalayan Pink Rock salt over the standard or even iodised offerings.

Iodised gives us - one essential ie. Iodine.

That wasn't the full recipe mate.

The dressing is made with 2 parts fish sauce, 1 part lime juice, 1 part sweet chilli sauce 1/2 tspn grated ginger.

Also make sure the beef is cut super thin ( think shaved ) also you may drain and repeat the boiling water process if too much blood is present.

Lol noooo, It's Austrian salt that is mined at a depth of 2Kms... ensuring no pollution apart from Dinosaur poo!
