Be prepared for snow. It doesn't stick around much, but it does snow in the high desert. Black ice is more of a problem, especially on Hancock
summit.
January is a serious convention month in Vegas. Your trip is well timed, missing CES and NAHB.
On a two day trip with a day in Vegas, you aren't going to see much around the range. I would suggest going to Nellis AFB on Friday afternoon.
Whatever is flying will be heading back to base for Miller time. Saturday around the Nellis range will be pretty dead. I wouldn't even bother to hang
out around the range on a Friday or Saturday night.
Depending on wind direction, you can watch the Janet's land from the Town Center shopping mall or the Fry's Electronics parking lot. If they are not
flying over there, then you would need to go to the long term parking garage to watch. It is relatively cheap and security doesn't seem to give a
crap about people photographing aircraft from the garage. They will eyeball you once and that is about it.
You might want to consider arriving a day earlier and spend that day up north.
