I love pb and chocolate and have recently had a craving for oatmeal and oats.
These came out pretty good. I will be sending some to my honey overseas and keeping some to myself hehe. Well actually these are for me, his are packaged already
I cooked mine longer since like a crispier cookie.

Mblah's Peanut Butter Oatmeal Cookies w/ Chocolate Chips

Ingredients
3/4 cup peanut butter
1/2 cup brown sugar
1/4 cup and 1 tbs white sugar
1/4 cup shortening
3 tbs extra virgin olive oil
1 cup flour
1 cup oats
1 large egg
3/4 cup of mini chocolate chips
1 1/4 tsp baking soda
1/2 tsp salt

Directions
In medium bowl cream together brown sugar, white sugar, shortening, olive oil and peanut butter til smooth. Beat in egg til blended. Now combine flour, salt and baking soda and stir into peanut butter mixture. Add chocolate chips and blend then mix in oats til combined. Put bowl in fridge til chilled, easier to roll when cold.

When ready drop onto greased cookie sheets into little balls and flatten with a fork and bake 10-15 mins on 350F (175C). Longer if you like crispier cookies

Mblah...all of your recipes are (mouth watering good)..I am really looking forward to this one. You have combined 3 of my favorite foods oatmeal, chocolate and peanut butter....yummy!

Question: how long should the cookie dough be chilled in the refrigerator...about 1/2 hour?

Those look really good...I thought I would add this cookie sheet I use it when baking and alter the recipe to fit the type of crunchiness or chewiness I want..it works great and thought it may help out.

Hey Mblah - another great thread.

What do you think about using vegetable oil instead of extra virgin olive oil?

I've found that the olive oil kind of dominates everything else. Maybe I use too much though.

Awe thanks

Yea that should be fine. You don't have to chill them I just find it easier with the PB and everything else in them, it's easier to shape them.

I love PB and chocolate. If I had nuts I would have added chopped wal nuts lol I had to resist the urge to add coconut! lol

I think I will give these a go as they sound yummy. (And I don't cook! I used to bake but then I got CFS)

And they have a ton of Potassium in them, which counteracts the Barium in the Chemtrails and Calcium in the chocolate against the Strontium. Vitamin D in the egg, against Aluminium.

BTW If you replaced the chocolate with raisins you would really raise the levels of Potassium. And as I am Potassium deficient, I should really add the raisins but I am going to make the recipe just as you have written it.

Peace

Thanks for that tip sheet! I have never seen that and like Mblah I've added it to my cooking folder! Great addition....now I know how to keep my cookies from spreading all over the place when I do not want them to!!
