My husband loves duck, pheasent and grouse. He will not eat chicken or turkey. I cook duck for any speical hoilday. I am looking for new recipes to
try out. This is one that I ususally use.
Ingredients:
One duck
two large oranges
one large lemon
one line
salt to taste
two cloves of garlic
pepper to taste
McCormick steak seasoning
Wash duck throughly under cold running water and pat dry with paper towels. Juice the oranges, lemons and lime and strain out the seeds. Mince the
garlic very fine and add to the citrus juice. Poour garlic and juice mixture over the duck. Add salt and pepper to taste and sprinkle with steak
seasoning. Cover and set in the refridgerator for at least 12 hours.
Preheat oven to 350. Take duck out of the fridge and let sit on counter top for half an hour while oven is heating ( this knocks the chill off a
little and lets the duck cook more evenly). Put duck in oven and let cook for 1 and a Half to two hours or until juices run clear.
Note: Cover the wings in aluminum foil to prevent over cooking.
