Okay onto the issue of wood! If you can find some hickory wood that stuff smokes like no other wood, but can be a little costly if you are buying it
in high bulk.
But one of the tricks to the trade here, and seeing that grill I dont think I will tell you anything you dont know but if you dont here we go.
Always soak your wood in water for 24 hours before you cook! This will keep your wood from being dry and burning up really fast!
And dont use gas or fuel to get that fire going.. You can leave some dry wood out, and get that going.. Get yourself a really nice bed of white
coals, and thats when you add the soaked Wood! For a really slow burning effect! And it will smoke it so nice!!
We use to do huge pig cook outs here in hudson when I would go out and hang with my Outlaw buddies.. MC's really know how to cook a pig, and throw a
party!! woo!
We would start this mother up on thursady evening, cook it threw the night, and keep it rotating.. Besure you have 2-3 guys to take turns while one
guy sleeps.. But be sure the grill is man'ed at all times.
And cook those pigs for atleast 20-26 hours!
Man Im a bit jealous! If you lived in florida.. I would totally bring some beer, a couple hot chicks and enjoy me some PIG!!!
