Here's something I tried and my kids loved it, wish I could say the same for the wife.
Prepare your mashed potatos the same as you do now and add a LITTLE cinnamon. It's a nice change.

No one mentioned rosemary. It works well with meat (lamb, veal, beef and pork) as well as with veggies and starches. Plus if you chop it fine enough and mix with some garlic, thyme, oregano and oil it makes a good dipping sauce for bagna cauldo or as a spread for garlic bread.

Oh my god, CUMIN! I haven't tried using it until recently, but it tastes soooo good in just about everything. You can add it to vegetables, soup, pickles, curry, rice, chili. I'm pretty sure you can add it to anything savory and it would taste delicious

How 'bout nutmeg? Heres what you do. Take your weight and ddivide by ten to find out how much you should use. Here's an example for me:
180lbs / 10 = 18 grams
Weigh it out and stir into a very tart citrus drink and gulp it down before you spew. The best part of this dish kicks in about an hour later and lasts up to 24 hours. enjoi!

Clove is my favorite spice..but not as versatile as others.
I like using it in coffee grinds with cinnamon.. in hot cereal ..with cinnamon. and it even tastes great in homemade dressings..such as raspberry vinaigrette , especially for a holiday salad.. I like it on spinach salads with strawberries, and nuts, and other good stuff..
