That is exactly the point! If biological entities, including monkeys, could evolve into humans than why wouldn't they all evolve into humans
Why would only some evolve and the rest remain monkeys

OK, sounds like you need to some very basic reading of the ideas of evolution. For a starter, I'd recommend Dan Dennett's Darwin's Dangerous Idea. His metaphor of the Library of Mendel is a great way for a layperson (like me) to visualize how the very complex process of evolution works over a long time. Then I think you'll know the answer.
Dawkins' The Blind Watchmaker is also a good basic read. Dobzhansky's Mankind Evolving is the book that turned me into an evolutionist, but that was decades ago.
