Okay I have searched high and low for this and cannot find a clue: Does anyone know how they get the seeds to stick to the bagels? Is there some magical Sesame Seed Glue they use? (Yes that was a joke, I'm not THAT stupid!)

If someone can find me a page that explains this please, Thanks.

I feel like a compelte moron because im sure the answer is extremely simple...

Oh, I though this thread was going to be about Cheerios.
we used to call cheerios, bagel seeds.

Aren't the coatings put on just before baking?
When the dough is sticky?

When I make bagels at home...... wait a minute, gotta splain...
first you cut out the donut shape, then you drop them in boiling water, then you bake them.
Just before baking you give them an "egg wash" (egg whites brushed on), then you sprinkle the seeds on, then bake.
The egg whites give them the glossy/shiny look.
I like poppy seeds and onion powder better than sesame seeds.
So I think you could call the egg wash "seed glue"..... LOL
Are you trying to make them homemade? If you are, you're never gonna buy them at the grocer again!
Try garlic, garlic and onion, bacon bits, celery seed, etc.....

Sesame Seed Glue is the best stuff to stick those nasty buggers onto the bun. Some of the asian glues are best because they work for poppy seeds, sesame seeds and onions.

If your local store doesn't have Sesame Seed Glue you can take an egg and a little bit of water mixed with a wisk to make an egg wash. Paint the top of the bagel or bun with some of the wash and dip it in the seeds before baking.

I find the wash and dipping is faster than glueing each seed on individually, but not as pretty.

LOL, same general idea.
It is kinda tedious glueing poppy seeds on one-by-one.
The dipping method is by far my favorite.
