BLACK PUDDING FROM SCRATCH (ENGLISH)

Serving Size : 6

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/4 qt Fresh pig's blood
8 7/8 oz Bread cut into cubes
1 1/4 qt Skim milk
1 lb Cooked barley
1 lb Fresh beef suet
8 oz Fine oatmeal
1 t Salt
2 ts Ground black pepper
2 ts Dried and crumbled mint

Put the bread cubes to soak in the milk in a warm oven. Do not heat the
milk beyond blood temperature! Have the blood ready in a large bowl, and
pour the warm milk and bread into it. Stir in the cooked barley. Grate the
beef suet into the mixture and stir it up with the oatmeal. Season with the
salt, pepper and mint.

Have ready 2 or three large roasting pans. Divide the mixture between them
~- they should not be more than 3/4 full. Bake in a moderate oven -- 350 F
~- for about an hour or until the pudding is well cooked through. This
makes a beautifully light pudding which will keep well in a cold larder.

Cut into squared and fry till heated through and the outside is crisp, in
bacon fat or butter. Delicious for breakfast, or for supper with fried
apples and mashed potato.

I'm not a veggie, but to me, I dunno, making something with an animals blood does not appeal.

I've heard that in parts of Africa the people mix cows milk with cows blood and drink it while it's still warm. Personally I think I'd gag, but I shouldn't judge without trying it first.

I've never heard of blood pancakes, what part of the planet do you live on???

EDIT: I see you posted Finland above, is this a common dish???

actually it is LOL... i mean it is a country Portuguese family event. its called "matanca" or matanza in Spanish... and the all family gets together while the man slaughter the pig, with a precise cut in the throat, the fresh blood than flows into a bucket and all sorts of dishes are than made with the blood ...
not suitable for more sensitive men or women, as it would be understandable the pig will scream very lowd while he his throat is beeing cut. yes ... i know its sad... but really...is there a easy way to kill anything ?

Just because the strawberry plants doesnt scream out in pain when you're PULLING out the strawberries ...repeatedly... doesn't mean you're not hurting them

I dunno, maybe if you slip the butcher a few quid, he'll send a jar your way.

My parents are Guyanese and I've had Black Pudding a LOT at family functions, and I must say.. I stayed away from it for a while because it sounded and looked nasty... but once I DID try it.. ohhhhh man...

...I love the stuff. It tastes so good...

gosh, now my mouth is watering... darn you, BTS!
