You may know him better as President Gerald R. Ford, the 38th President of the United States. When he took office, he wasn’t given much to work
with – a bad economy and a splintered country, but I kinda liked him. He had ethics and was an honest man. And evidently, he fancied himself a
chef and liked to work in the kitchen, too. I’ve had this recipe attributed to him for about a dozen years and used it several times. It makes a
nice tender and flavorful round steak. Here is the recipe:
President Ford’s Braised Eye Of Round Steak
Ingredients:
2 Tbls. of vegetable oil
12 4 oz. beef eye of round steaks
¼ tsp. of thyme
1 tsp. of seasoned salt
¼ cup of flour
1 cup of beef consommé
1 cup of burgundy wine
Directions:
1. Heat the oil in a large frying pan over medium-high heat.
2. Season the steaks with thyme and seasoned salt, then dust them lightly with flour.
3. Fry the steaks in the pan over medium-high heat until browned on each side, about 5 minutes per side.
4. Pour the red wine and beef consommé in with the beef. Cook over medium-high heat until the aroma of wine dissipates, 2 to 3 minutes.
5. Reduce heat to low, cover and simmer for 1 hour.
6. Serve steaks with the sauce and a garnish of fresh parsley.
Recipe makes 6 servings.
