Not much time now! The lifeboats have all left, all less than full (those bastages)!

We must raid the kitchen! They left us! What shall we eat??

Well, we have these rice noodles no one likes, and this rotten cabbage the Asian refugees down in steerage brought aboard, and a couple hot dogs...and we have plenty of champagne. We shall eat like Kings!!

But, but...what shall we have, Sir? We shall eat Pho...noodle soup for you whom don't know. It's not like Ramen, but it is like ramen, but different. We shall eat "Pho"! BUT, there is not much time left, so we must move quickly!

Hey, we can use this chicken broth, right? Yes, yes we can. And, we can slice these meats, right? Yes, yes we can.

So, we shall mix the rice noodles, the chicken broth, the Kimchi, the spices, and simmer it well over the fires...and we shall eat. Indeed it will be good. And we shall drink fine champagne while the band plays. It will be glorious!

We shall talk about the times of old, better times; and we shall be cheerful...to the end. I toast you all! We have fought the most courageous fight of all...that of life!

I WANT my PHO GODDAMNIT!


I just ordered DoorDash for some nourishment. I’d post pics of one of my sprinters sitting with the damn rotor on the ground - but 17 steps in all prohibits that. It’s been a hell of a last 24 hours……

I made oxtail soup broth today and will be using it with the meat removed to make some beef vegetable barley soup tomorrow for lunch. I have no clue how to use rice noodles, are they any good?

Yes, very. And you can use some of that oxtail soup broth with them! In fact, oxtail is some fine broth to use with Pho!

Yes, that was great. I love the Pho and most all of the Korean too for that matter. Not dugogi though.

Yeah, they had some weird stuff up in northern South Korea, that's for sure! Mainland China has even way weirder sh**, but at least they call it what it is...'Buttered Batsh** in a Fermented Monkey Ballsack"...but in Korea you have no idea what's in some of that stuff!

Oxtail used to be pretty cheap years back, now they want about nine bucks a pound for it. But the soup it makes is so great. It also makes great baked beans, but my attempt at that did not give nearly as good a result as some of the beans and oxtails others made I tasted. I only get one package of oxtail with my half cow. The person who gets the other half usually does not want that or the heart or liver...I take it all. Beef heart makes the best beef jerky. You need a meat slicer to slice it and it is a lot of work, but it gets gobbled up when I make it. It also makes real good meatloaf, but it takes some experience to figure out how to alter the recipe to accomodate it's stronger taste and courser texture...but that is worth the time too. Funny how much better I feel after eating heart meatloaf. It does not make good burgers for the grill though, but it crumbles to make tacos well too.

Strange how I cherish the cuts of beef the most that people think are inferior cuts...short ribs make great soup and you can make broth with them parbroiling them then make BBQ shortribs on the grill out of the ribs.

DAMN....NOW I AM MAKING MYSELF HUNGRY WITH THIS POST....GOING TO HAVE TO GO REHEAT A BOWL OF OXTAIL STEW.

The weird foods I miss most from my time in SE Asia are:

- Roti Telur w/ a side of fish head curry. (An unleavened bread dough mixed with egg, kneaded, stretched and fried on a grill, with a side of fish head curry for dipping sauce).

- Roti Bomb (similar ingredients to Roti Telur but with lots of butter mixed in and a denser consistency, also fried. Served like a large dense roll)

- Mutton Curry (Just what is sounds like, wethered lamb in a spicy curry sauce...often served with Roti Bomb...just to die for!)

- Fish head Curry (Not what you think. A giant fish head, cut off well rear of the head leaving the best meat of the fish, simmered in a spicy tomato curry sauce with vegetables).
