US renewables generated more power than coal and nuclear

The first train line switched fully to hydrogen

Lab-grown meat was deemed safe to eat

Scientists found a way to reduce shark bycatch

Countries agreed on climate and biodiversity funding

Beavers were given legal protection in England

Wild mammals made a comeback in Europe

A rare pigeon was captured on camera

NASA gave us a detailed look at distant galaxies

- my favourite - HOPE:
DART proved we can protect Earth from asteroids

and more...

To add to your list:

The militarization of an already weaponized IRS.

The accelerated importation of drugs, gang members, human traffickers, and other assorted criminals.

A push to get young children interested in sex.

An increasingly unequal application of the law.

The drive to disarm law abiding citizens.

Pandemic - Yes, this is unusual. I'll give you this one
Lockdowns - Yes, this is unusual. I'll give you this one
Vaccines - Vaccines happen all of the time, this one just impacts you more. Most seem to be for tropical things these days
Food factory fires - Not especially unusual, just reported more. Only effected a fraction of a percent of facilities and no more so than usual.
Culling of poultry - Bird flu, regular occurrence in Europe
Wildfires - Been happening for decades. Remember Smokey the bear.
Historic Flooding in the South, and now possibly California - Within scope for the extreme weather caused by climate change.
Disruption in flights - Business as usual.
College tuition being given and taken away - People playing politics. Nothing particularly new
Mortgage rates rising & Houses stagnant - When you get to my age, this isn't really a thing. Seen it a dozen times before
Electric cars/mowers etc. being pushed then blackouts and being told to reduce use - Unrelated, the blackouts are due to a lack of investment in infrastructure. Decades old problem
“War” in Ukraine, massive amounts of money being sent - I've seen this dozens of times. Nothing new. Just another proxy war between the US and Russia.
Crypto being inflated and deflated - Predictable, it's why people are advised against investing in it.
Food prices skyrocketing - Market forces, you'd prefer price caps
Mass layoffs yet “can’t find enough workers” - Different industries, different requirements.
Proposed bans on gas appliances - Nothing new, just a proposal, won't happen due to industry lobbying.

All I'm seeing are dots, aside form those directly related to covid, these are mostly just predictable shifts in the economy.

I lived under communism. Communists destroyed cultures in a completely different way. This isn't even remotely how they did things in my home country, for example, nor any other country I lived in.

Look up California Wildfires.
You’ll see that there are so many from 2020 to now, compared to the rest.
Yes wildfires happen, but the rate has absolutely picked up.

Food factory fires. At first I was just like you, and thought, there is always fire danger at these types of places. Nope, do a little research you’ll start seeing places that never had a problem for over 100 years all of a sudden go up on smoke, but not just one place, many places.

Disruptions in flights is not business as usual. I don’t ever remember seeing flights being grounded, lack of pilots and other issues that are facing air travel.

Electric cars, did we have electric cars on the road before, nope, this is new. We also never had places pushing hard for everything to go all electric while in the same breath telling people to reduce their electricity usage.

Then there is the dictatorship of the masses! relying on that as the sole argument for legitimacy might turn out to be a loosing argument!
