I buy Fromm, which is made in the U.S. out of domestic ingredients. What you are seeing missing from the shelves are foods from China or ones that require ingredients from China.

the cats will initially be hesitant when one flavor changes to another, so they'll try to reject the first night of the new stuff. Once they decide to eat it though, it's fine from then on to the point where you could rotate it straight back to what they were eating, and they'll be suspicious of it.
