Those are really great for regulating the temperature. I’m old school, cast iron or Dutch oven. I usually use a Dutch oven because it’s bigger.

I have two cast iron pans which were my Mom's. She is still alive, but has no use for such weighty cooking tools. The 14" cast iron pan was HER mother's. Very cool. It is so seasoned that I think if I dropped it the seasoning would shatter like glass. The exterior of the pan is bumpy


Agree that an inch at best, and not deep fried. I like a lot of Cajun seasonings, and I've been soaking the chicken in buttermilk and hot sauce, but since I can't taste that, I'm less inclined to continue to do it.

That's how my grandmother's is, too. Inside bottom is mostly smooth, but the rest is bumpy.

Anyone ever marinated chicken in....yogurt before rinsing, dredging, and frying (similar to tikka masala)?

Here's a recipe you might want to try, it's how a grandmother of mine used to cook it that she never taught my mom.


Place raw chicken in container; One suitable to amount of chicken pour buttermilk on it so no pieces show then cover the container and let it refrigerate over night

(Flour mixture)
in large seal-able bag crumble up fried pork skins add them to flour mixed with McCormick chicken seasoning

Place chicken pieces in bag shake it up to coat right before frying

In hot oil pan maize(corn) oil or shortening then fry for seven minutes both sides.


I watched both my grandmothers in the kitchen cooking when I was growing up, and learned A lot. My other grandmother wouldn't share her crab cake recipe with my mom either :p I guess there has to be one you hold back for yourself.
