Trueman's Unholy Rice with Wild Mushrooms

I've been having fun with my new toy. I bought a meat grinder. I saved the bones of a pernil and a chicken and boiled all together and today it was time to bring back to life all those delicious fatty flavors.



I also found a good deal in Amazon for a big jar of wild mushrooms from France, about 23 bucks. I have some Casillero del Diablo waiting to be summoned and released. This is the result.



I defrosted the fatty broth and used to cook the rice in my Dutch oven and the fat on top to fry the onions. No waste.


The previously soaked mushrooms joined the chopped onions.


Then it was time to summon the diablo. I had to transfer the mushrooms and onions to a bigger pot.


Once the rice was done, I added salt and nutmeg for a kick.


Then, it was all about mixing and make a mess all over wife's kitchen. That's why I cook only when she's not at home.


I told her " The Devil made do it".


No better way to boost the immune system. I might go now for a second dish, I'll add some grated Romano on top.

Hahaha...., believe me. Rice is there.

And I ended up saving half of the mushrooms for tomorrow pasta. Little pasta, lotta mushrooms.

I meant what kind of rice Arborio, Basmati, Jasmine, Brown, Parboiled...?
It makes the porn more real for me.



You know what I'd do with the left overs? Put it on toast a big pile with some Romano and maybe some fresh parsley in the oven... bamm!

I used white long grain rice, just because it's what I found in the kitchen. Wife stored it in a container, so I didn't see the bag. She usually buys Tio João - Brazilian Long Grain White, probably that one.

I think you can use the rice of your preference.

Left overs have the potential to turn into an even better food. Cheese is a great booster.

Yeah, that's the way they call in in my local Hispanic supermarket. Pork leg could be misleading, you could end up with a huge full pork leg.
