Prejudice can include other factors aside from the biological. For example, I can have a prejudice against smokers or people who vote democrat.
Racist refers to phenotype (visible genetic characteristics, such as skin color.) Although I think the term these days largely involves pairing a phenotype with a cultural characteristic. For example, saying something like all Asians are good at math or all Anglos love hot dogs.
