Costco selling 'magnificent' 72-pound cheese wheel for $900

I'm half Italian and lived in Italy many years. Nobody there buy the whole wheel. You buy what you need for a couple of days and come back for more.

The part that you can't grate because it would slice your fingers will be wrapped in paper and saved in the fridge. Once you have 4 or more pieces stored, you drop them in the pot where the minestrone is boiling.

That's what my Nonna used to do.
