Ours came out fantastic too. This year was the first year in quite a while that we did
not brine our turkey, and it came out fantastic! We
did a fresh (not frozen) Red Bird turkey and just lightly seasoned and smoked it. I stuffed it with some sacrificial apples, onions, celery and fresh
herbs, and then put the herb butter under the skin. It came out juicy and really, really, good. I love the brining method, but it's just a bit too
salty for me now (especially on subsequent days) so we decided to just go back to a traditional smoke.
The cranberry horseradish sauce came out awesome as did the cranberry relish. Those were probably my fav's. The sweet potato pudding was good, but I
can only take so much sweet (wife loves sweet stuff), so it was okay. She loved it, and that's what counts.
I'm stuffed!
