When people try a "new" beer (at least to them), I always say, "OK. Now take another sip." They typically say, "Hey! That is not that bad!" Oh, and I
always try to start them off on the lighter side. That, and when they say, "I don't like hoppy beers," I always suggest a stout! The reaction always
is, "That is dark and looks strong! I don't want to try that!" But after a sample and two sips, about half usually will take one!
Pairings are kind of tough. You can go like-like, or opposites. Or the wide open, dissimilar food-beer pairing.
Along those lines, a sour should also work with some fatty meat, like a pot roast. I am not sure I would pair one with wagu but who knows! I do like
both...
