I think his culinary experience might help. The toughest meat (I love a good beef stew) requires stewing, slowly and gently. I've done stews that ran for 6, 12 and even one for 24 hours. (I forgot it was still on the stove, being honest)

End result, it melts in the mouth. "They all melt down here..."

I also use a meat tenderizer on tougher cuts.I like pounding these
meats with my little mallet,not too hard,just right.I don't want to
injure my arm or something.
I admit that once I was filled with alcoholic drinks[ marinated from the
inside] I would be easier to pound into submission/tender morsels...
That explains why I was a NO-SHOW at Denver!
