Now there's some really good eats right there!!! Rocky Mountain Oysters is what we call 'em here.

We cook 'em up fresh off the steer!! (seriously)

I still get a little squeamish with the pounding 'em out part though!! Gives me the willies, but the wife has absolutely NO problem with doing it!! In fact, I think she rather enjoys it! Can't imagine why.

Mamabeth, as the old saying goes, it's happy hour somewhere.

Our younger kid has a thing for meat fats. As in she'll kindly request everyone's fat trimmings at dinner to eat. And she EATS THEM. She says it tastes much better to her and the texture is better than the actual meat, which makes my hubby shudder & gag.

Her favorite is pork fat, second runner up being chicken fat. I have weird children...

Mom woukd always take the fat cap off a pork roast and cook it till it was nice and crisp on the outside while still soft on the inside, you could hear your arteries hardening, but it was soo good.

Aladobi in french à la daube old fashioned way ( actually you can use almost anything ) . Old fashioned way is to put meat from pigs head and you don´t need gelatin to do it as it coagulates on its own.
This pic is quite nice tho

it is not easy to find full pig heads from the market anymore due all restrictions that EU have.

Speak for yourself. I am about the lowest lowlife you could ever encounter.

Always remember my gran calling chicken soup "ducks foot soup" as in the 1940's etc there wasn't much food available in the UK and my mum remembers her uncle in the 1950's quite merrily sitting there on the doorstep wringing the ducks necks.

There was literally 100% usage of everything so even the small bits of meat on the feet were important.
