The big one in Hyde Park has good security but the provincial ones like Manchester and Newcastle won't have any whatsoever.
At the very least a visible security presence at these types of places serves as a deterrent to would be attackers and should provide an additional sense of security to those attending.
The idea that you have to protect every location is false logic. We know that these people are looking to hit targets that fit 3 criteria. Large crowds, lack of security and potential symbolism. Christmas markets fit all 3 of those perfectly.

Not sure where you are but think you might be a bit out on the sizes of some of these places, Manchester has a population of around half a million.
As to Christmas markets nearly every large town and even a lot of villages have them so why not commit acts of terror in a smaller location, by hitting a major city you allow the majority of the population to see a tradegy but think "well I am safe as it only ever happens in places like London".
