Simple Avocado Chicken Salad

This one is quick and easy and gets a thumbs up from my soon-to-be 6-year-old boy as a lunch box sandwich filler.

Healthy Avocado Chicken Salad

2 c shredded chicken - we've grilled and/or poached our own for this with various southwestern spices on the grill, but we've also used leftover smoked rotisserie too and anything works

1 avocado - in small chunks

1/2 tsp garlic powder

1/2 tsp salt

1/2 tsp pepper

2 tsp lime juice

1 tsp fresh cilantro

1/4 c mayo

1/4 c plain Greek yogurt

Mix, cover, and refrigerate.

You can just eat it or make in into wraps or we put our kid's into a pita pocket with some spinach. But it's quick and easy and tasty.

But to eat it frozen might be a bit problematical...

Yeah, refrigerate. If you were freezing it, I'd say freeze.

what a fantastic recipe. we do a lot of chicken salad (the standard diced chicken with walnuts, grape halves, and scallion with mayo). I've never considered using greek yogurt, although i can't fathom why not.

Yeah, this sounds right up my alley. My wife would love it, too. I might do some diced apple or something for a bit of crunch and sweet...but beyond that you have given me a lead on some new ideas.

Sounds so good, love chicken salad and avacados.

I like to cut an avacado in half and scoop some chicken salad in to the middle, then top it off with hot sauce.

My planned lunch for tomorrow!

Cooking a chix tonite, wife is out of town so it's me and the dogs.

I have 2 avocados ripened and 3 in the bag so I have to start eating them.

Hold the mayo and add red onions for me.

Side of kimchi.

picked up a recipe from this place in Abilene. They served a whole avocado with a pile of pulled pork, some crema (i think it was chile and lime) and a corn salsa.

Low carb carnivore delight, if you nix the corn salsa and use black bean salsa instead.

On my gawd, that sounds so good! Pork and avocado together, with crema! May have to try and replicate that this weekend. Have family coming to stay for a week, that's a good reason to cook a lil pork butt!
