Spicy red lentilsπŸ…πŸ…

1 bag red lentils
2 large cloves garlic chopped.
1 inch pc fresh ginger grated
1 small can chopped tomatoes
Water

Spice mixture
1 1/2tsp salt
1/2 tsp black pepper
1 tsp each cumin, curry powder, chipolte chilli powder,(Smokey flavor and mild heat) paprika and turmeric.
1/4 C olive oil.

Add lentils garlic ginger and tomatoes to 2 qt saucepan. Do not add salt yet.
Add enough water just to cover.
Bring to boil, reduce heat and simmer until very tender. About 30 minutes. You may need to add water a bit at a time.
When tender set aside

Put all spices in a small bowl. You need to add them all at once.
Heat olive oil until very hot.
Quickly dump all spices into hot oil. Be careful it will spit and sizzle.
Quickly again pour the oil mixture into cooked lentils. It will spit and sizzle again so take care.
Stir spices into lentils.
Enjoy.

I've made something very similar to this. It's very good!

If you're okay not being completely vegan, it's also good with a little plain greek yogurt swirled in it.

This is a dish I made for my vegan son for thanksgiving one year. I wanted something tasty that he could enjoy that wasn't just cooked vegetables.
I get requests for this all the time.

I have other good recipes that are vegan legal but taste like real food. Oh you know what I mean. LOL
Special diets don't need to be boring.
I also have tons of low carb recipes if anyone is interested.
Tell me what you like.

Eggplant bites
πŸ†πŸ†
small eggplant peeled and cut into 1 inch pieces.
Kosher salt
2Tbl corn starch
1/2 C panko bread crumbs
1/2 tsp each Salt and pepper
Tomato sauce.

Put eggplant into a bowl and sprinkle very liberally with salt.
Let sit about a half hour. Rinse salt off and pat dry with paper towels this removes any bitter taste from eggplant.
Combine s&p and cornstarch and bread crumbs in a plastic bag.
Add eggplant and shake.
Heat oil in a fryer to 350
Add eggplant bites a few at a time fry two minutes remove from oil drain on paper towels.
Dip in heated tomato sauce.

You don't have to justify something just because it's vegan friendly. I'd just say what it is and tag it as vegan friendly.

We have a cookie recipe that gluten free and vegan friendly. They use oats, either chia or flax seed (forget which), mixed with some cinnamon and mashed banana. You mix it, drop them on the sheet and create thumb prints that you fill with a jelly or jam of choice.

We get a local made fruit, juice, pectin one to fill with.

They're really good for breakfast with a bit of peanut butter.

But good is good regardless of which special diets it fits.

Mmmm. I'm not vegan. I'm a carnivore but I love veggies with my meat. My middle son is vegan. Sometimes he adds fish and eggs for short periods just to maintain his weight . He bikes miles and miles each week.

My ex (I'm getting her back) had some dietary restrictions (legit not annoying trendy BS) and vegan stuff was an easy way to skip reading through a list of ingredients before hand. People bag on vegan food but a lot of it is freaking awesome!

Thanks OP! Always on the lookout for a new recipe.

Does anyone else have a stupid compulsion to mispronounce words? When I typed recipe I thought ress-ip. I blame the word epitome (it's pronounced eppy tome until you realize you're an idiot).

There ya go. The rest are cupboard staples so you should be good to go.
Well maybe not fresh ginger I have to buy that for this dish. Dried just does not have that sweet fruity taste.

ill likely throw this together later this week. Except ill use bacon in the base Partly because i like bacon a lot, and partly to fix the recipe.
