A little pareidolia? Maybe. However, it's rare when mother nature is able to sculpt with this level of detail. Down to the horizontal wrinkles in the trunk, and the shape of it's face and skull. The grey color of it's skin, and dark sunken eyes. It's even dipping it's trunk into the sea to take a drink!

But, wait, why aren't the mars-rock people here claiming it's a giant fossil? Or an advanced civilization that worshiped elephants? Right, because it's on Earth, therefore things like imagining rocks that look like things here on Earth is silly.

Or it could be because it is here on earth where we can actually go see it and touch it in real life and it's not just a rover beaming pics back to us from another planet entirely.

That picture is Mokuhooniki Rock (aka Elephant Rock) in Hawaii. The Elephant Rock in Iceland from the OP is on Heimaey Island.

wish i had a pic but there is also a hound in norcal sitting on top of the river, i guess the locals call it "dog rock"

probaly can google it, i think its off hwy 70, it been a long time

just looked it up and the drought is crazy, the water used to be right up under the face, it looks completly different now
