It's not the plastic in the door which is impermeable to the microwaves. It's the metal screen between the layers of plastic/glass.

Correct. If the door were just plastic, the microwaves from inside the oven would just go right through. A solid metal door would stop microwaves, but then you couldn't see your food cooking.

So the door is metal, but with holes to see through -- and those holes are sized and spaced just right to stop most of the microwaves from getting through.

Also, I believe your theory of RF interference is a bit flawed. The reason that signal coherence can be degraded by a secondary RF source has nothing to do with propagation through the air, and somehow elbowing the one signal out of the same space. That's not how ElectroMagnetic waves work. The signal degradation is due to the equipment receiving it attempting to read the information embedded within the waves. If the microwave oven is close enough to the receiver it will attempt to process the random noise being thrown out by the magnetron, instead of the ordered signal in the carrier wavelength it was designed to work with. And modern cellphones operate in a spectrum of 800MHz to 2.45GHz. Microwave ovens operate at 2.45GHz. But where cellphones are limited to a 1-2.5w output range, microwave ovens operate at a 400-1100w output range. So, while the energy is generally contained within the metal case of the machine, there is some leakage which can interfere with cellular and wifi signals.
A better analogy of the way the interference works is to imagine theater. There is someone on stage speaking, and you can hear them clearly fromantic the back row. This is your normal signal. Now imagine that the middle 3 rows of people all start speaking random sentences in a loud conversational voice. You can no longer hear the person on the stage, because your ears are being overwhelmed by the much larger and nonsensical source of noise in the middle. That doesn't mean that the speaker's voice is any less powerful, nor does it mean that it isn't still transmitting to the back row with the same clarity. But because of the much stronger random signal source between the two of you, you can't discern it anymore.

And whice physics is it?

Newton
Enstein
Quantum

I love all these people that point out the "laws". We have a few chapters of the whole book of physics, but think we can right all the "laws" already. Maybe we should finish the whole book before writing laws on pin.

Maybe we should wait for some definitive results before re-writing the book. From the paper:

Our test campaign can not confirm or refute in any way the claims of the EMDrive but intends to independently assess possible side-effects in the measurements methods used so far

The moment you mention NASA, and they ".. confirmed that they believe it works".

While an EM drive is far from impossible, and does not defy any laws of physics. The above is more like a PC statement from NASA that shouldn't be taken seriously. A couple of years back, NASA said that the earth doesn't grow at all ... only a hair thickness a year.
