I have a good cranberry salad recipe......My Mom used this for years, I've not seen one quite like it anywhere else, and have no idea where she
originally got it.....
1 bag fresh cranberries
1 fresh orange.....one with a thin, unblemished skin
3/4 c. chopped pecans
1 c. sugar
1 sm. box orange jello
1 sm. box raspberry jello
2 1/2 c. hot water
Grind the cranberries and the orange, peel and all....... then cover with the cup of sugar, and set aside.
Dissolve both boxes of jello in the 2 1/2 cups of hot water. When the jello has partially set, stir in the cranberry-orange mixture and the chopped
nuts.
This can be substituted for regular cranberry sauce, or eaten by itself! It sets quite firm and can be done in a fancy mold if you want, but looks
really nice in a bowl.
