Tonight's culinary attack
2 - 8 oz petite tenderloin steaks bought from our local non-GMO, non-hormone agricultural college program
2 - medium sized artichokes
Artichoke
Steam in a pot for 40-45 minutes with a touch of butter over the top. Before cooking, garlic goes in between the leaves
Steak
Hot pan with a bit of EVOO
Tenderize steaks and top with dry sage, salt, pepper, cumin and onion powder
Mince garlic cloves and dice onions
Brown the onions and garlic - After brown, remove them from pan and make them into a bed on the plate
Sear steak on all sides and cook to preferred doneness - add butter to oil and baste steaks while they cook
Remove steaks to rest
Gravy
Deglaze pan with brandy
reduce slightly until brandy is deep brown
Drizzle brandy over steaks on top of onion bed
Serve artichoke with a little bowl of butter
