It looks like potatoes from afar ...

But no, it's a form of noodle, and it's called "gnocchi".

The sauce is typically "neopolitana", but you might just try some blue cheese, or parmasan.

It's so al dente, sweet baby cheesus!

Gnocchi made from sweet potatoes is also very good.

Especially if the sauce features some nice bacon.

Pre-made Gnocchi is very good too.

Two things to remember: You're dealing with potatoes, basically, so it is a very filling dish...easy to "bite off more than you can chew" (which makes great as a "peasants dish").

And second: because it is very filling, go easy with any sauce, especially if it's a creamy or cheesy sauce.

Less is more....kind of how you would like to see Sophia Loren dressed!

My grandmother, very Italian, used to make a fantastic gnocchi dish. She would put just enough oil in a pan to coat the bottom, then ad the gnocchi and cook them just until they start to get a little golden brown color. Then transfer them to a pre-heated pot of chicken broth with some fresh herbs and shredded chicken. It was basically the gnocchi equivalent of potato dumpling chicken noodle soup and it was unreal. A very old traditional Italian dish that never caught on in America where the focus always seems to be on the sauce.

That sounds delicious. Chicken and Dumplings are such a comfort food, anyway, and gnocchi is versatile as hell.

I love the potato version, but I also love the ricotta version. I dI didn't know you could do it with ricotta until I stumbled upon a delicious recipe that takes a lot less work.
