I believe I have perfected the low fat brownie! It's decadent, fudgy, moist and delicious. Best of all, it's under 100 calories! And, trust me when
I tell you that you won't notice that it's low calorie!!
Recipe: Low Fat Decadent Peanut Butter Fudgy Brownies
3/4 cup whole wheat flour
1/3 cup cocoa powder
1/2 tsp baking powder
1/4 tsp salt
50 pieces of Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips
2 tbsp Can’t Believe it’s Not Butter
1/2 cup Splenda
1/4 cup brown sugar
1/4 cup sugar
2 1/2 tbsp sugar free applesauce
1/2 cup Egg Substitute
1 1/2 tsp vanilla extract
48 pieces of Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips
6 tbsp PB2 + 3 tbsp water mixed
Preheat oven to 350F. Line an 8 X 11 pan with aluminum foil. Coat the pan (foil) with non-stick cooking spray.
In a medium bowl, sift together flour, cocoa powder, baking powder and salt.
In a small bowl, melt together 50 pieces of bittersweet chocolate and butter. Transfer to a large bowl and whisk chocolate mixture with sugars and
applesauce. Whisk in egg substitute and vanilla extract. Gently mix in the flour mixture, mixing until no streaks of flour remain. Batter will be
thick. Add 48 pieces of bittersweet chocolate and stir.
Spread batter into prepared pan.
Place nickel sized dollops of PB2 mixture evenly on top of batter all over pan. Then run a fork through batter to spread the PB2 mixture across the
top of the batter.
Bake for about 22 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
Cool brownies completely in the pan. Store in an airtight container.
Makes 15 brownies (5 X 3) at 96 calories each.
