Need:
Potato
package of shredded cheese( or shred yourself): cheddar, mozarella, or whatever you like.
milk, 1/4 per potato
salt
pepper
sour creme
chives
Pre-heat oven to 350deg F. Put large Idaho( or other brown potato) on cookie sheet, and bake in oven until thoroughly cooked( about an hour). Put fork
into middle to test if it is cooked through. Take potato out of oven, lay on it's side, and with a sharp knife, cut potato lengthwise( near top).
Using a spoon, remove guts of potato and place into sauce pan. (basically, so you have a hollowed out potato). In saucepan, combine 1/4 milk, shredded
cheddar cheese, a tsp salt, and a tsp of pepper. Cook potato until milk is dissolved and cheese is melted. Take mixture, and put back into potato.
Cover with more shredded cheese. Put back into oven for 15 min, or until cheese is melted. Remove from oven. Cover with sour cream and chives, if
desired.
Make as many as you want!
