This chicken recipe is a healthy one and economical too! If you keep the ingredients on hand...and decide to invite someone over for a meal (at the
spur of the moment)...you won't disappoint your guest!
You will need:
4 (4-ounce) skinless, boneless chicken breast halves
1/2 cup bottled barbecue sauce
1 green pepper, cut into strips
1 red pepper, cut into strips
4 small baking potatoes or...12 new potatoes, thinly sliced
1/2 teaspoon ground black pepper
Preheat your oven - 350 degrees
Tear off 2 pieces of foil - the size of a cookie sheet
Place one piece of foil on the cookie sheet
Spoon half of the barbecue sauce on the center of the foil
Layer the chicken, green and red peppers and the potatoes on top (there will be 4 of these)
Sprinkle with the black pepper
Top with the remaining barbecue sauce
Place the remaining piece of foil on top
Seal the edges with double folds
Bake for 50 minutes
