This chicken recipe is a healthy one and economical too! If you keep the ingredients on hand...and decide to invite someone over for a meal (at the spur of the moment)...you won't disappoint your guest!

You will need:

4 (4-ounce) skinless, boneless chicken breast halves
1/2 cup bottled barbecue sauce
1 green pepper, cut into strips
1 red pepper, cut into strips
4 small baking potatoes or...12 new potatoes, thinly sliced
1/2 teaspoon ground black pepper

Preheat your oven - 350 degrees

Tear off 2 pieces of foil - the size of a cookie sheet
Place one piece of foil on the cookie sheet
Spoon half of the barbecue sauce on the center of the foil
Layer the chicken, green and red peppers and the potatoes on top (there will be 4 of these)
Sprinkle with the black pepper
Top with the remaining barbecue sauce
Place the remaining piece of foil on top
Seal the edges with double folds

Bake for 50 minutes

This recipe makes 4 servings - enjoy!

Beautiful meal in a bag!


I love to do this sort of thing, Although i tend to chuck in some white wine, wild mushrooms and a tickle of double cream instead of the barbeque sauce, but either way the chicken comes out tender and cook perfectly.

don't make a fuss just chuck everything in a bag and cook it, man food

It is a simple meal...(the basic recipe)....I like your ideas of adding wine or just about anything that hits a persons fancy.

Exactly, brilliant food and even the worst of cooks can't really get "sticking some things you like in a bag, then sticking it in the oven" wrong lol

Thanks anyway, since my last post I've just stuck some shallots, beef, potatoes and red wine&cider (in a foil bag of course!) in the Oven.

You gave me an idea for dinner

I am doing a variation on my packet dinner tonight too....I am using salmon instead of the chicken...adding some mushrooms, onions, and garlic...with a white wine sauce.

Great idea! I have been there and done that with Beef/Wild Game, Pork and Fish as well. The meal is up to your imagination.

I'm starting to dislike you and MBlah as with recipes like this...I must experiment. And it's making me fatter!

It is almost spring...and I was just sitting here thinking of a picnic...with chicken...homemade potato salad etc.

I can hardly wait to be outside enjoying a meal with a friend and viewing the beauty of nature.
