I've been making dinner for most of the afternoon now, and I made some chocolate mousse and tuilles for dessert last night, for tonight. I felt like
I wanted more than that with dessert, so while in a lull in my preparation, I threw together some ingredients I had in my fridge and it has turned out
fantastic!
1 cup heavy cream
4 tbsp unsalted butter
1/4 cup brown sugar
1/4 cup sugar
1/4 cup Guiness
2 tbsp brandy
1 pear ; cut into slices
Combine the cream, butter, sugars, and guiness and bring to a boil. Add the brandy, reduce to a simmer and allow to thicken to desired consistency.
Add pears just before serving to give them a nice poach.
I added this with my chocolate mousse and tuilles, and it was amazing! the sauce went so well with my chocolate espresso mousse.
