This is a favourite for me that can feed 4, or 2 if your extra hungry lol a very simple to make dish that goes well with new potatoes and green beans
but can be served on its own or with anything u like.
The ingredients u will need are:
2 or 3 chicken breast fillets or goujons
2 tbs of plain flour
2-3 tbs of butter
chicken stock cube or jelly (i prefer jelly)
1 ts of mustard (optional)
a pinch of garlic powder (optional)
a punnet of mushrooms, i used closed cup mushrooms but any will do
pre made puff pastry or if you can make your own (which i cant lol)
Preparation:
first heat a pan with a little oil to cook your chicken, or u can grill or boil if u dont want to fry
cut the chicken into bite size cubes and add to the pan
chop your mushrooms and add these to the pan also until browned and the mushrooms soft
the chicken doesnt have to be cooked thoroughly at this point as it will cook more in the oven
take chicken and mushrooms off the heat and let cool
now get a pot and melt 2-3 tbs of butter to this add 2 tbs of plain white flour this is your rue for the sauce in the pan, stir the flour into the
melted butter, it will clump up this is normal u can also use a whisk or fork to stir, then add 125-150 ml of chicken stock to the flour and butter
and whisk until no lumps of flour remain and you will end up with a sauce thats quite thick in consistancy.
you dont want it too thin if it is u can add more flour if too thick add more stock.
add to this a teaspoon of mustard and a pinch of garlic powder(both optional)
preheat your oven to 200 degrees
get a oven proof baking dish or pie dish and put in the chicken and mushroom then pour the rue over the top
roll out your pastry to fit the dish and place on top pressing onto the edges to seal
put a knife in the middle of the pie to make a hole to let the steam escape
pop into oven for 25 minutes and eat whilst hot
*if you dont like a rue u can make it with cream...just add a little doublecream to chicken stock and some black or white pepper and a little corn
flour to thicken*
*you can also add sweetcorn or leeks or any other ingredients that you like*
