As much as I'd like it to be a mutant snake, it does appear that there is a large mass within the snakes body right where the leg is protruding. The snake has clearly swallowed something large that is located right where the leg is.

I'm with you Butcher, I think it ate something that punched through and never left it's body, instead becoming a permanant part of the snake.

I don't understand how it could be his dinner stretched out through him. Isn't the easiest way to know for them to cut the snake open and see if there is actually something inside, or if the leg is physically attached? Or is that just too logical?
