Sorry for this newbie question, but are all 1 oz gold coins 24 karat?

Are there different types of 1 oz gold coins or are they all the same?

Also, I see on various websites, you can get different types like American Eagle coins or Canadian's Maple leaf.

Is that just preference? Does it really matter which type of gold coin you get?
Is the value still the same?
