The nationality of the vessel in the second picture is certainly US - otherwise considering the quality of the photograph (WW2, like the OP said) if
it wasn't an Allied vessel the turret would probably be pointed at the camera.
The top picture looks like something they would have above a muster list in case of emergencies, except obviously it isn't labelled with all the deck
levels, bulkheads, first-aid kits, fire-fighting equipment, lifejackets, submersion suits etc etc etc that you'd find on a modern vessel's
requirement for ship information.
It's probably just a diagram that was circulated throughout submarine vessels and it isn't labelled because this particular diagram was kept back in
order to know the layout of the ship structure in case one of them sank and they needed to do some salvage work.
As for the ship type, it might be worth it if the OP would explain where the picture came from...
